  1. Preheat the oven to 160 C.
  2. In a large bowl combine mashed banana, eggs, maple syrup, oil, cinnamon, vanilla, baking powder and pinch of salt. Mix well.
  3. Add the flour, mix well.
  4. Lightly butter your loaf tin. I use butter wrapping paper that I keep in the freezer (after I used the butter) specifically to butter the baking forms.
  5. Spoon batter into the tin and bake for about 50 min.
  6. Remove from the oven and cool before turning out the loaf.
