If you are a proud owner of an icecream maker, chuck it all in and follow the instructions.
No ice cream maker? No sweat. Just add the coconut sugar to a small amount of coconut cream and whisk until the sugar disolves. Now pour the sugar mixture, vanilla and the rest of the coconut cream in a blender and whizz for a few minutes. Transfer to a container, cover with a plastic wrap then a lid and freeze for 30 minutes. Take it out of the freezer and whisk it briskly. Return to the freezer. Repeat whisking until the consistancy of the ice cream is just right for you.
