While I have your attention :
The dates are use in my recipes are medjools. They are soft, delicious and will give you the lovely caramely flavour. Oh and before I forget : I ALWAYS use (organic) butter. DO NOT, I repeat DO NOT go for margarins or any kind of “funky” butter substitutes. Go for the real thing, always. Your body and your tastebuds will thank you for it! I will have a whole blog post dedicated to the ” butter vs margarine ” soon, so don’t despare. In a meantime go and bake that slice !
- Make sure you are looking your best. Put some mascara on. High heels always work for me. Check which lingerie did you put on in the morning. After all, it is a hot date (slice).
- Preheat the oven to 180°C. Grease and/or line 2o cm x 30 cm lamington pan.
- Combine dates and juice/water in a saucepan over medium heat. Cook while stirring until the dates absorbed all the liquid (around 15 minutes). (In the meantime check your make up, file your nails). Set aside to cool.
- Using a electric mixer, cream butter and Rapadura sugar until light and fluffy. Sift flour and bicarb soda over the butter mixture. Stir until well combined. Now add oats. Mix again. Press half of the mixture into the prepared lamington pan. Spread the delicious date mixture over the top. Lick the spoon.
- Crumble the remaining oat mixture over the dates so they are completely covered. Press lightly. Bake for about 40 minutes or until your hot date (slice) is good and ready ( gold or very, very, very light brown ).
- Serve hot with dollop of yoghurt or slightly whipped cream, or cold. Your call. I will not judge you.
Every time I make this slice I kick myself for not doubling the recipe. If you need some leftovers for the lunchboxes, double it up baby !
