It's begin of autumn here in Australia but clearly the weather didn't get the memo!
It's still hot and steamy, so what do you do on hot Saturday afternoon ?
You make delicious vanilla ice cream.
Bit of a warning though: once you've tried a proper homemade ice cream you can never go back to the store bought, sickly sweet thing.
Pour the cream, milk, coconut syrup into a mixing bowl. Add vanilla and pinch of salt. Mix well.
Assemble your Ice Cream Maker according to the instructions. I once made the mistake of pouring the liquid into the freezer bowl before inserting the mixing arm and by the time I inserted the arm (some 30 sec later) the liquid started already to freeze and stick to the walls of the bowl, so there was not enough space to insert the mixing arm!
Transfer the liquid into your Ice Cream Maker bowl (with the mixing arm inserted already!) and turn it on. The time will depend on your Ice Cream Maker so use the instructions. My ice cream was ready in 30 minutes.
If you don't have an Ice Cream Maker just mix the mixture well every 10-15 min while freezing.
Fancy a chocolate ice cream instead?
Reduce/omit vanilla and add 1 tbsp ( or more for richer chocolate flavour) of raw cacao to the mixture before you pour it into the Ice Cream Maker.
