  1. Cut the pumpkin into big chunks, peel, discard the seeds. Place in a big pot, cover with water. Add ginger and some salt. Bring to boil and simmer till soft (about 20 - 25 minutes).
  2. Saute the onion and minced garlic in a tablespoon of olive oil, until soft and golden. Do not let it become too dark.
  3. When the pumkin is soft take the pot of the heat and pour a little bit of the liquid out, but do not discard it. You will add that liquid back in, if necessary.
  4. Add the sauted onion and garlic mixture into the pot with pumkin.
  5. Using a handheld blender blend all until smooth.
  6. If you feel that the mixture is too thick, add some (or all) of the saved liquid back into the pot and blend again.
  7. Season with salt and pepper.
  8. Serve with a dollop of cream and freshly grind pepper. Top with bacon crumbs.
