Easy peasy lemon squeezy coconut cream ice cream!
The last few days were absolutely sweltering in this part of the world, and on days like this all you crave for is cold, freezing, frosty ice cream. I don't know about you, but I have a problem with the comercial ice cream. And the problem is this: not only is it FULL of sugar, it is also chock-a-block of crap ingredients you don't want to eat or feed your pets, not mentioning your little angels. Have you ever made ice cream (or anything else to eat ), tried it and thought "all this beauty needs is a litle bit of modified starch, some stabiliser, bit of acidity regulator, few drops of emulsifier, some "natural" flavour and a pinch of "natural" colour for a good measure!" No? I thought so! My point exactly! Next time you are shopping and this so called "food" is staring at you from the freezer, go right past it! Pick up a can of coconut cream, coconut sugar (or coconut syrup) and vanilla instead! You can whip it up in few Augenblicks, freeze it and enjoy it the same afternoon.

If you are a proud owner of an icecream maker, chuck it all in and follow the instructions.

No ice cream maker? No sweat. Just add the coconut sugar to a small amount of coconut cream and whisk until the sugar disolves. Now pour the sugar mixture, vanilla and the rest of the coconut cream in a blender and whizz for a few minutes. Transfer to a container, cover with a plastic wrap then a lid and freeze for 30 minutes. Take it out of the freezer and whisk it briskly. Return to the freezer. Repeat whisking until the consistancy of the ice cream is just right for you.
